Legend of the Easter Bunny
According to legend, the Easter bunny originated in Germany, dating back to 1682, when a German professor wrote a book titled, On Easter Eggs. He stated because of the myth, simple-minded folks and children believed an Easter Rabbit laid and hid eggs in gardens to hunt, in order to amuse adults.
Supposedly, the legend arrived with German immigrants to America. Children originally made ‘nests’ for the eggs, but at some point, that evolved into baskets.
During the medieval period, rabbits were associated with the Virgin Mary, and it is believed the bunny was used as a symbol for Easter by German Protestants. Since an egg represents ‘new life’ it became connected to the resurrection of Jesus, and it is said that the cracking of the egg represents the empty tomb.
As legends go, I can’t be sure if any of this is true, but it got me to thinking what if the tradition had started here in the US in place of Germany? Instead of an Easter bunny, some other animal might have won the honor![

Coconut Cake Recipe
Taken from Sweet Thangs: Southern Sweets from Two Sassy Sisters
Coconut Cake
Ingredients
1 Yellow or white cake mix
2 cups sour cream
2 cups granulated sugar
2 cups flaked coconut
1 (8 ounce) whipped topping
Directions
Mix sour cream, sugar, and coconut—set 1 cup of mixture aside
Bake the cake according to package directions
When done, cool for ten minutes in pans on wire rack, then invert and cool completely. Then split each layer horizontally, with a serrated knife. (Now, you should have 4 layers)
Frost between each layer with the sour cream, sugar, coconut mixture
Fold the Cool Whip into the 1 cup reserved sour cream, sugar, coconut mixture and use to frost outside of cake, then sprinkle with coconut.[
