I want to wish my Dad a Happy 80th birthday!
It seems forever since I posted a menu planning Monday. With everything going on it feels as if our worlds are upside down and will drop us right in the middle of an apocalypse movie. I haven’t watched enough zombies to know how to fen for my self with them so I will hide safely in my little barricade and survive of my garden ( shame I didn’t make it bigger since this won’t be enough food for a long period of time LOL.) Also, I don’t want t to live off squash which seems to be the only thing coming off at the moment.
So today I want to talk about types of squash and recipes for them and how to store them.
There are many types of squash. Yellow straightneck or Yellow crookneck being the most common. Acorn squash is shaped like large green acorns. It is a hard quash with a mellow orange center and best cooked for a long time. They are great for stuffing and baking.
Butternut is another hard squash. It has a pretty yellow inside and the seed cavity can be scooped like a boat to hold stuffing. Butternut also makes a tasty soup or cut into chunks holds its shape nicely for stews.
Straightneck and crookneck are a pretty yellow squash with a more mellow taste that zucchini. these you can use in many ways… more on that in a minute.
Zucchini is a big green squash that is used in many dishes, They can be fried, sautes, baked, grilled or stuffed.
Spaghetti squash is another popular one. You bake or boil until soft then scrape the insides up to look like spaghetti. I myself don’t care what you do to it it does not taste like spaghetti.

Now what do you do with them all?
Dipping in Parmesan and panfrying is always good.. cut into slices or sticks make tempura and fry. Slice them ix with onions and bell peer and saute in bacon grease, crumble in the bacon for good measure top with green onions.

You can saute strips of squash, zuchinni peppers and onions and add to a fajita or use them as the fajita filling or stir fry add rice and a nice meal.

If like me your squash is coming off faster than you can eat it then freeze right away. I take and cut into rounds, sticks, zoodles or boats freeze on a cookie sheet then bag. I’ll have fresh squash during the winter without the expense.

I used to enjoy the squash I grew in my own gardens — yellow squash, pumpkins, sometimes zucchini. The squash I buy from a store, not so much. Fresh is always better!
Store-bought here in winter is so high and the stuff is small or looks horrible. I have a freezer full LOl.
Happy Birthday to your esteemed Dad. I can tell he is a fantastic human being. Love your talent with growing things and cooking them up into delicacies. Yellow summer squash is one of my favorites. My mother used to grow them, and so did my husband and I when we lived in the forest.
Thank you. I grew up with a garden I think it was more dad than mom but she canned everything and cooked up yummy dishes in the summer. I especially love Fried green Tomatoes.
I love squash except for spaghetti squash. Have you ever cooked spaghetti squash, Cathy? Acorn and Butternut might be my favorites, but I like the versatility of zucchini. Happy 4th of July weekend.
I have cooked spaghetti squash but it’s not my favorite either! I love butternut and acorn. I had lots of butternuts and came from my dads with most of it stolen. There is still plenty vines!
