Cat: Today our guest is Kate Hill. Hello Kate. Are you ready for Christmas?

Kate: I am. For me, there’s not too much preparation. I exchange gifts with only a couple of people, so shopping isn’t too difficult. I will put up some decorations around the house. I have Halloween ornaments that I put on my artificial Christmas tree, and those are my favorites. What I look forward to most is watching Christmas horror movies, like St. Nicholas and Red Christmas. Every year I have to watch the Tales from the Crypt episode And All Through the House about a deranged Santa stalking a mother and daughter on Christmas Eve. I enjoy some non-horror Christmas movies as well, like Mixed Nuts and An All-American Christmas Carol. It’s also fun to watch holiday episodes of favorite old TV shows.

I usually prefer or be solitary around the holidays, but unlike the hero in my Christmas romance, Spirits of Christmas, I don’t have a haunted past that is the reason for this choice. In the story, the heroine is also alone for Christmas, but that’s not generally her preference. She’s very much into a traditional Christmas and enjoys decorations, cards, and Christmas cookies. I agree with her that making treats around the holidays is fun, and I’d like to share a recipe that I enjoy. If you try it, I hope you like it, too.

Kate’s Chocolate Mint Protein Treats

1/3 cup protein powder (I use unflavored pea protein, but you can use any kind you like.)

1/3 cup almond butter

1/4 cup honey

1 teaspoon peppermint extract

3/4 of a 3oz bar of dark chocolate (I use 88% cocoa, but if you like it sweeter, use the kind you prefer.)

In a bowl, mix the protein powder, almond butter, honey, and peppermint extract. It’s pretty sticky, so I knead it with my hand. Once it forms a smooth dough, break off pieces and roll them into balls. I usually get a dozen (around 1 inch).

Melt the chocolate. Dip or roll the balls in the melted chocolate and place them on a dish covered in wax paper. Place them in the refrigerator until the chocolate hardens. Enjoy!

Christa smiled again, more relaxed this time. “You’re welcome. Give me like ten minutes.”

She hurried upstairs, her adorable bottom swishing. She was dressed in jeans and a sweatshirt, her dark hair in a ponytail, and not a hint of makeup. Very pretty girl.

With Christa upstairs, it would be a great time to explore the house without the risk of losing control in front of her. He’d been here for a few minutes now and so far, so good.

He walked slowly around the parlor and then headed down the hall to the kitchen. His heart pounded again and he placed a hand on the wall to steady himself.

Light-headed.

Tight chest.

He made it to the kitchen. It was hot and he couldn’t breathe.

“Mr. Connor.”

He jumped and spun around, his muscles coiled. Fight or flight reaction, and he was ready to fight.
