Wow, it is already November. Did you enjoy the big Paranormal party last month? Keep reading as December will bring another big event and giveaway. November brings a very busy time with the Holidays upon us.

It is also a busy time for a lot of us authors that participate in NaNoWriMo What is NaNo? It is National November Novel Writing Month. Writers all over get together and write a 50k novel in thirty days. You write so many words a day at your convenience go to the site and log in. It sounds simple but it is quite stressful. I am going to give it a shot this year. Last two years I wasn’t able to participate.

With such busy times, we need easy meals. The crockpot can be a girl, or guys, best friend. You can put the food on before work, church or on a day you don’t feel like messing with a big dinner. set it and forget it.

Beef Stew is one of those comfort meals you can do so much with. You can make it with or without potatoes, different types of sauces or just roast the beef in the slow-cooker. Today I wanted simple peppered beef with gravy.

Ingredients: 1-2 pounds stew meat depending on how many people you want to feed and how much they eat. I go with two and have the leftovers for lunch. 1 can chicken broth 2 cups water 2 tablespoons beef better than boullion a couple of dashes Worcestershire sauce. sal,t pepper, garlic, powder and onion powder. 1 half large onion sliced. About a quarter cup of flour for dredging and a little oil for browning.

Season beef after washing. coat with flour and fry in batches until lightly brown all over…. Don’t skip this step. It gives the meat more flavor and better texture and color. You can add Cajon or Creole seasoning but today I just wanted pepper. While meat fries mix all other ingredients in a crockpot and heat up. Whisk well. When it is warm add the drained meat cook on high about 4 hours or on slow longer. Serve over mashed potatoes, rice or noodles ( none of which I can have anymore sigh)

Beef vegetable soup is another go-to. You can customize it to your likes and dislikes. brown 1 pound ground beef, dice a whole onion, peel and dice 4 medium potatoes and diced carrots until about a cup or cup and a half. Add a can of beef broth, fire-roasted tomatoes, tomato sauce, salt, pepper, onion powder, garlic powder, and a dash of hot sauce into crock pot. I used a bag of frozen green beans and a bag of frozen corn. Put in drained cooked meat add water to cover well and cook on high 6-8 hours until potatoes are tender. This makes a lot but you can freeze it.

    • Yes I love it with cornbread too. They are adorable. She had all kinds on Pixabay and the cutest thing is the artist’s name is Annalise! even spelled the same as my great grandbaby.

  1. Sounds like a delicious meal. I don’t eat red meat, anymore, but I sure do crave beef stew or vegetable beef soup when it’s chilly outside. I wrote my first four or five books during Nano. Well, I mean I wrote 50K toward the books. It really helped to get the word count in while I was working a day job then. Good luck, Cathy.

    • You can make stew and especially the soup with no meat. Vegetable stock works and the better than Boullion I use comes in Vegetable too. I am having to cut sugar, starch, bread, rice, and pasta right now per dr orders and it’s not easy LOL. Thanks for the encouragement. This book is going slow. LOL
