Today’s guest is Christina Lynn Lambert. Christina writes suspenseful paranormal romance featuring shape shifters, psy, and other characters with strange abilities.
Cat: Hello Christina, tell us about a favorite trick you pulled on a coworker, friend, or family member.
Christina: I used to leave plastic fake spiders, the kind found in the dollar store or Halloween shops, in different places around the house for my husband and kids to find. I would put them on pillows, in the refrigerator, in lunchboxes, in the bathroom sink, just everywhere and then laugh when they screamed. This summer, I opened a container of raspberries and found several actual living spiders crawling around on my raspberries. Maybe karma laughed when I screamed.
Cat: I do that too but ewe on the spiders in your berries. I think I will quit leaving them around. What are your top 5-6 favorite things about Halloween/Autumn?
Movie: Practical Magic
Book: Odd Thomas by Dean Koontz
Food: Aside from eating tons of Halloween candy, I love a good fall barbecue. Sitting around a fire pit with a bunch of friends, eating hamburgers and drinking hot chocolate is the best.
Drink: Apple cider
Activity: Hiking on a nice scenic path, especially if there’s a stream or river along the route.
Cat: I love Halloween and making treats for the kids or themed dinners do you have a favorite craft or recipe?
Christina: I love cake, basically any time of the year. To make things festive, I have cute holiday themed plates that I use to serve desserts and treats. One of my favorite recipes comes straight from Betty Crocker’s New Cookbook (1996 edition).
Applesauce Cake:
Ingredients:
2 ½ cups all purpose flour
1 ½ cups unsweetened applesauce
1 ¼ cups sugar
½ cup stick margarine or butter, softened
½ cup of water
1 ½ teaspoons baking soda
1 ½ teaspoons pumpkin pie spice
1 teaspoon salt
¾ teaspoon baking powder
2 large eggs
1 cup raisins (I always skip the raisins)
2/3 chopped nuts (optional!)
Frosting (maple-nut buttercream, cream cheese, or whatever you wish)
Cooking directions:
Heat oven to 350 degrees.
Grease bottom and sides of pan with shortening and lightly flour
Mix all the ingredients (except the raisins, nuts, and frosting) in a large bowl using an electric mixer.
Bake for approximately 45 minutes.
Cool completely before frosting.
