These days it seems like we are under so much pressure. Do more for less at work. Worrying about if our jobs are going out, kids in school, shootings, accidents, running kids here and there after work, getting meals on the table. It can be stressful.
How can we make things easier? An electric pressure cooker is a new crockpot. Instead of putting things on early in the morning and worrying about it now you can cook the same foods in half or less time.
Beans, Meatloaf, even soup in 30 minutes (plus coming to pressure time). Mashed potatoes or potato salad in ten minutes. Boiled eggs in 4.
This week I am sharing a couple recipes I tried this week.
Pork chops and Gravy. https://www.spendwithpennies.com/instant-pot-pork-chops/#wprm-recipe-container-146643 I would cut the broth down just a little I had way too much gravy and it didn’t thicken quite enough. Also, My pork chops must have been thinner because they literally fell apart so next time I am cutting the cooking time to 10 minutes if I have thinner chops. So make sure your chops are the thickness the recipe says or you may want to cut the cook time a little. They were still delicious. If you google pork chop and Grave insta pot recipes you find tons. Add rice, couscous, or mashed potatoes with a veggie and you have a nice comfort food meal in around thirty minutes. (don’t forget a Biscuit or roll to sop up that awesome gravy!
My grandson loves meatloaf and I probably shared one of these before but in case you lost it here is a great one, again and you can make the potatoes at the same time add some steamed green beans or Broccoli and your meal is complete! It cooks while you do whatever you need. https://www.soulfullymade.com/instant-pot-meatloaf-potatoes/ Instead of catsup I mix tomato sauce catsup, a splash of Worcestershire sauce and brown sugar I put a tad in the meat and cover the top put the extra on the table for those that like dipping sauce Like my grandson. for a change of pace, you can use your favorite barbeque sauce on top or make a buffalo sauce. I do cook mine the full 30 minutes and let it come down about ten minutes on natural. So this meal takes about an hour to make.

Nope, I don’t own one. Not since I’m cooking for one and home all day, so I use an old-fashioned crockpot throughout the summer when it’s so hot. I like your recipes though.
Most of these can be made in the crockpot just adjust the time. Also they do make these in small sizes too. You might want to look into them. Mine is 6 quart but I know they make 4 quart and maybe smaller

Cathy, I am missing your Tweet sharing button. Am I just not seeing it? Great post. I don’t have an insta pot but have thought of getting my DIL one. Her surprise for her birthday is an air fryer; do you use one of those? My family came over the other day, and I made a casserole (don’t snicker), a kind of chili with cornbread on top. It was delicious and hearty, but not once did I think of taking a picture of it! I’ll have to do better about that.
