Happy Memorial Day #grilling #celebrating #holiday


Hi Ya’ll . Happy Memorial Day. For many, this weekend is their first chance to go on trips, there are lots of craft fairs or celebrations, and yard sales are prevalent. This was a busy week and weekend for me but I had a blast.

Last week we spent the entire week making shower decorations. Luckily I have a Silhouette Came and we cut most of our stuff from Card stock. We found cute Ideas on Pinterest and adapted them as well. But I’ll be sharing all the sower stuff next week.

Wednesday I finally made my spaghetti that I’ve been craving so long. Since we were so busy on the decorations, I went simple with boiling noodles, cooking ground beef and a jar of good sauce.

A little carnival came in for the holiday and Thursday night, my daughter-in-law, one of my friends and I took my grandson and hers to the carnival. We got corn-dogs at the Sonic for 50 cents instead of the four dollar ones at the fair. We also brought our own drinks. Growing up my mom did this for us too. We didn’t get the expensive carnival food but did get a bag of Cotton Candy. Then mom would make corn dogs, funnel cakes and caramel apples for us.

Friday I fried chicken for me and my hubby. Oh man it was so good.

Saturday was my fourteenth wedding anniversary. We were supposed to go out for dinner but that didn’t happen. I made a nice dinner of sea scallops, cod, rice and greens. D=Simple but yummy I made lava cakes for dessert. had to have something decadent LOL. To make the fish I simply salt and pepper, put some butter in a hot skillet added two tablespoons of olive oil the added the fish I cooked a few minutes on each side until done added some french fried onions to top and cooked a few minutes longer to brown. The scallops you heat a pan to hot. add olive oil and butter very little then sear the scallops a few minutes on each side. All done.

I relaxed some and worked on finishing grandie girl one’s Blanket for her shower. I still need to get her Elephant Lovey made too.

Sunday we smoked ribs, had potato salad, deviled eggs I made peanut butter cupcakes with chocolate frosting
