Happy Cinco De Mayo a day late. No we are not Hispanic or Mexican but i love doing themed meals and tacos are something my family loves. It is also easy and versatile and relatively inexpensive to make.

Today I am going to share the recipe we made yesterday for Cinco De Mayo.

Taco Pizza (I made mine from scratch but you can buy frozen or refrigerated pizza dough as well.)

1 pound of hamburger cooked and made into taco meat. cut up and prepare your favorite toppings. we had lettuce, shredded cheddar, pepper jack, salsa, and avocado, sour cream and taco sauce. Make the dough according to directions, form into 2-3 large pizzas or an individual for each person. Let rise. Put on taco sauce, and meat and bake like you would a normal pizza. Let everyone top the way they like and enjoy.

For dessert I made cinnamon bread sticks. put the dough on a sheet pan and let rise. With a pizza roller score into 16 fingers. mix cinnamon and sugar. pour melted butter over crust sprinkle with cinnamon sugar and bake . Make a gaze from powdered sugar and water, give each person a dipping cup of glaze.

Friday we had Fajitas. We do sheet-pan style where you cut the meat and spread on a sheet pan and bake. We do a pan of chicken a pan of steak, and a pan of onions and peppers. pop in oven and cook about 15 minutes pass out warmed tortillas and toppings and let everyone customize their own. I usually make refried beans too.

Another popular meal here is taco bar. I make the taco meat put all the usual taco ingredients on the table or buffet table, Flour tortillas, hard shells and a couple tortilla bowls.

Nachos are a favorite as well and I generally do the same make the meat, put the chips, nacho cheese dip and queso dip on the table with sour cream, and guacamole and let everyone make their own.

We like chicken enchiladas as well. I cook chicken in the crock-pot or insta pot, pull it season with taco seasoning as it cooks. After the meat is done I add a little green enchilada sauce, put it on tortilla shells and roll burrito style. I put some sauce in the bottom of the casserole dish, lay the enchilada seam side down cover with more green sauce, and bake about 20 minutes. Then I sprinkle with mozzarella, cheddar and Monterey jack cheese, put back in oven 5 minutes and serve with rice, beans, and sour cream and guacamole.

These are all easy, quick recipes that most people like, feed several, and don’t break the bank. Try one for a taco Tuesday night or all of them on Tuesday for a month full of Taco Tuesday recipes that are sure to please!

    • Thank you. I had a dream the other night about mom. She was asking me about my cookbook and why I haven’t started one. I guess that’s a push from above.
