Welcome to In The Spotlight! Today’s guest is Katy Eeten with how she spends Christmas and a great sounding candy recipe. Hello Katy!
I want to thank Cathy Brockman for hosting me on her blog today! Christmas is almost here, and I couldn’t be more excited. Some of the seasonal festivities I partake in include a full day of baking cookies with my two sons (ages ten and seven), my mom, my sister, and my two nieces. One of the winning recipes we’ve discovered over the years is Chocolate Cookie Bark, found at https://www.kraftrecipes.com/recipe/095144/chocolate-cookie-bark. Trust me, it’s addicting!
We always get a real Christmas tree, and my kids get a kick out of helping Dad string the lights. It’s a true joy to watch. Throughout December, we try to watch every Christmas movie we own to help put us in the Christmas spirit. Last year, my brother was in town from Singapore, and he wrote a full script for our family to record a Christmas video that served as our Christmas card to loved ones. It included mini skits, jokes, and songs for all our family members. That will definitely become one of our yearly videos to watch.
On Christmas morning, the four of us have our own low-key celebration. We make chocolate chip pancakes and read the story of Jesus’ birth from the Bible before my kids almost explode from the anticipation of the unopened presents under the tree.
We celebrate with my side of the family another day that week, and usually have something very non-traditional like pasta or pizza for dinner. No ham or turkey for us 😊 When we visit my husband’s side of the family a few hours south of where we live, however, it is a true feast of all the traditional down-home dishes such as ham, cheesy potatoes, and vegetables galore.
To all reading this, I wish you a very blessed and happy holiday season, whatever your way of celebrating may look like.

Sarah Laughlin left her big-city life and dead-end
relationship behind for a fresh start as a fourth-grade teacher in the small,
Wisconsin town of Meadow Creek. And it feels like home, too, despite the
persistent troublemaker in her class and the lack of familiar faces. But the
holidays are going to be lonely this year. Until she meets firefighter Lincoln
Thompson. Suddenly, the hope of spending Christmas with someone she cares about
is within reach.
Lincoln loves his home town of Meadow Creek, but ever since his long-time
girlfriend left him for a better life in the city, he wonders if he’ll ever
find love in this small town where everyone knows everyone. Then he meets Sarah
during her class’s field trip to his firehouse, and a spark is lit. But when
they discover that Sarah’s troublemaking student is none other than Lincoln’s
beloved nephew, their newfound relationship is put to the test. Can they
navigate through the complexities of family dynamics to find a love that will
last?B
