Hi everyone! Today’s spotlight shines on Fran Thomas. She is here telling us how she celebrates Thanksgiving In Florida and sharing her favorite and unusual pie recipe. Hello Fran!

For the past couple years, my husband and I have eaten Thanksgiving dinner at our local Moose Lodge. They don’t charge for dinner, but we always donate a turkey ahead of time. The Women of the Moose do a fantastic job, and I really am grateful that I don’t have to cook a multiple course extravaganza for just the two of us.

Here in Florida, the pie of choice tends to be key lime, even for holidays. I found this non-traditional recipe years ago in a newspaper and have modified it a bit since then. Purists will probably turn up their noses at it, but we like it. We use key limes from the tree in our backyard.

Key Lime Pie

Prepared 9 inch graham cracker crust

1 envelope (4 servings) instant, sugar-free lemon pudding mix

1 cup skim milk

1/3 cup fresh key lime juice

½ cup low-fat lemon or key lime yogurt

1 cup fat-free non-dairy whipped topping (i.e., Cool Whip)

Combine pudding mix, milk, juice, and yogurt until smooth. Fold in the whipped topping. Pour into the crust.

Refrigerate until set. This will take a minimum of 2 hours, but overnight is better.

Makes 8 servings.

  2. As a Florida Cracker, I have included Florida in each of my books and so much enjoy reading it in others’ books as well. Kudos on including it in your delicious sounding story and your very interesting information about Thanksgiving. We did have a key lime pie on our Thanksgiving table, and also pumpkin, peanut butter, and chocolate. I really need pumpkin this time of year, and I think I am the only person among our current family members who has to also have English peas. Best wishes and thanks, Cathy, for the fab post.
