Hi Ya’ll. Welcome back to Meal Planning Monday. As you see the site is under construction so bear with me.
This week’s national food days are~~~
May 14th National Buttermilk Biscuit Day
I love a good homemade buttermilk biscuit. They aren’t as hard to make as you think. I like to make up a big batch and freeze some so I can grab one when I need it for my breakfast.
We love breakfast for dinner (Brinner)’
Buttermilk Biscuits & Gravy
Sausage & scrambled eggs.
Lofty Buttermilk Biscuit recipe
To freeze some of the biscuits make a double batch or two baches. cut biscuits and place on a cookie sheet lined with waxed paper and sprayed with buttery cooking spray. Make sure they do not touch. Freeze overnight or until solid then place into a freezer bag. You can store up to three months after that they wont rise as well. When ready to cook, take out hat you need and bake in a preheated 475-degree oven for 5 minutes take out and reduce heat to 424 bake 10 minutes or until golden brown. (oven temperatures vary so you have to watch them the first time then you will know)
May 15th National Chocolate Chip Day
Chicken Parmesan, angel hair pasta, garlic toast
I like this recipe. It is simple and fast. if you are feeding more than 4 add a breast per person, use an extra egg and a larger jar or two jars of sauce.
Boil pasta according to package directions. I use Boxed Garlic toast.
Bake extra for breakfast during the week ( freeze some too)
May 16th National Barbeque Day
Barbequed Pork Chops, Baked Potato, roasted Brussel sprouts
May 17th National Cobbler Day
Jalapeno Popper Chicken, mashed potatoes, salad, and a veggie
This is one of my favorite recipes, you can substitute buttery crackers for the pork skins.
May 18thNational Cheese Souffle Day and I love Reese’s Day
I don’t do Souffles so I think today will be Omelettes and toast.
May 19th National Devil’s Food Cake Day
Fried Chicken with gravy, Mashed potatoes, a veggie, buttermilk biscuits and the Cake.
I am going to try this insta pot fried chicken recipe
I am going to use legs and thighs and a breast for the hubby. Plus I stir in a teaspoon of mustard into the gravy.
As you see there are a lot of sweets days this week. I included a recipe for each for dessert.
Do you have a favorite recipe you are going to make this week?
