#foodiefriday cancelled. I need more #Coffee

Hi Y’all. Sorry, I don’t have a post this week. I have been running everywhere. Earlier in the week, I get a notice about being sued for a photo I used a few years ago and it knocked some wind out of my sails.

I haven’t. cooked much with  all the drama online and in life. I do hope next week to have a St.Patrick’ss post.

I do have something to share. My  trainer has been trying to get me to try this coffee first thing of the morning. It supposed to boost your metabolism. It sounds gross and I put it off until today. It is butter and coconut oil . Here is what he told me to do.  pour my coffee in the blender add 1 tbsp  coconut oil and one Tbsp butter (organic grain fed). You can add some honey as well. Carefully blend until smooth. It is actually good.  But no I refuse to eat raw eggs LOL

  1. I don’t drink coffee with butter, but I have a low carb friends who swears by it–Kerrygold butter is what she uses. Coconut oil — yes, I use that in other things, not coffee. Love that cup! I want one like that. This week I made oopsie (low carb “buns” made with eggs and cream cheese), Only I forgot to add the cream cheese and thought I’d have to toss them. I was astounded when they came out pretty good, just not as soft as ones with cream cheese. I was able to use them as hamburger buns just fine. Full disclosure–I did add one third cup of pork rinds crumbs to the egg mix. But your notice about the photo worries me, Cathy. Let me know what happens.

    • My trainer kept bugging me so I finally broke down. It is supposed to be Kerri-gold butter, but we can’t get it where I live. I will pick some up next major city I visit(DR time)I am going to try the oopsie bread this week.
