No Turkey left behind

Thanksgiving is now behind us with Christmas or whichever holiday in December you celebrate looming in front of us. If  like most of us you had a little too much food left over.  I had very little ham since the next day all the kids wanted ham sandwiches for lunch.  I use everything even the ham bone so I tossed that in a pot of beans. The ham salad i wanted did not come to pass…maybe after Christmas.

I did have a lot of turkey and stuffing left and some mashed potatoes.  Mom always made us croquettes with the leftovers and since i was doing traditional this year I thought  I would too. None of my grandkids had ever heard of it. I served that with my beans and leftover cranberry relish.

here is my recipe

2 cups dressing (or stuffing)

2 cups of mashed potatoes

3 cups of chopped leftover turkey(I used up my dark meat for this)

2 eggs

I cup of panko or regular bread crumbs( I like the panko for the extra crunch)

oil for frying ( I used my deep fryer)

Mix first 3 ingredients into a dough roll into 24 ( or more balls or oblongs)

roll in egg then breadcrumbs drop into fryer. do not overcrowd drain on paper towels.  I took my jellied cranberry sauce melted it in the microwave for a sauce you can serve with leftover gravy as well. The grandkids loved them and the few leftover( that was supposed to be my lunch the next day the oldest and her friends devoured for breakfast .

For the breast, I was planning a shepherd’s pie or  tetrazzini  but I didn’t have much left so I ground  it added  a boiled egg, some onion, celery and had a small bowl of turkey salad. Not as good as the  ham salad I wanted but  good none the less. I wiped my fridge in one day of the leftovers.
