Fun at the Park

Hello everyone!  I still don’t have any crafts this week since I am still at dads. Yesterday my brother called and invited me on a picnic. He rounded up the kids, picked me up, then we stopped at the store for fried chicken and sodas. I added potato salad chips and a fruit tray and we were set.

The park they chose had a nice Pavillion near playground equipment  for the little guys, near the sand volleyball  court and lots of room to play ball or frisbee.

After dinner we played sand volleyball  which  I haven’t played Volleyball in over 15 years. With my disabilities,  it wasn’t easy but we e didn’t really keep score…especially  after the opposite  team had us like 30 to 4 lol. The little guys liked digging in the sand.

After a break, we gathered for baseball. I actually hit the ball a couple times, got tagged out on first the first time then I made two bases the next time. Later actally made one run in.

There is a cute cabin for t h e little fellows to climb in. They got to stealing and we found  the culprit was wasps. My brother went to chase them out but I think they chased him out. One got him on the shoulder.

There I s a hiking trail t h ere as well but we were all tired as nd it was time to head back since the oldest (my niece) had to go to work.

It was a very fun day and I am surprised I didn’t wake up so she I couldn’t move.

Exploding spoons!

Hi, everyone!  It was a beautiful but hot day today. We took our morning walk, and there was a huge Corvette show downtown today. It was fun seeing all these cool car. Unfortunately, I didn’t bring my camera or phone along.

If you follow me on Facebook you are probably aware of my knack for exploding eggs and burning teapots. Tonight at dad’s I did an entirely new trick. I exploded a plastic spoon.

Please do not try this at home because yes some hot grease flew. I or no one else got hurt.

My brother and his family came over dads. My Sister-in-law was taking the two little boys to the park. New Luke wanted to crochet, and the other Luke went with his mom to help out with the little guys. Brother  watched the game with dad..

Dad has a perfect kitchen for a cooking show or entertaining since it opens into the living area so I could stand at the stove and cook and visit. I was on my last three stuffed Jalapenos when I heard some popping sounds. I took it for hot grease or escaped cheese. I heard a few more pops, this time it sounded more like popcorn.  Before I had time to think, the spoon made a loud pop. I hopped back and escaped the grease drops.

Just in case you still find it hard to believe here is the spoon. I learned my lesson to use a metal spoon.

Drunken Chicken Part Deaux

Hello everyone. If you didn’t read last week’s post about whole chicken cooked in wine, check it out because this week I am making not one more meal from the same chicken, but two. That’s right. I got three meals for two from one chicken actually four since the enchiladas fed dad and I twice. I even used the leftover au jus for gravy last night and it was the best I have made in a long time.

Last week dad and I had the leg quarters for dinner leaving the backbones and breast meat.

To make the enchiladas, I took and shredded the meat into a dish and took out a smaller bowl for chicken salad ,the other I made chicken enchiladas.

For the enchiladas I took about 2 cups of meat, cooked it in a skillet with diced onion and a packet of  taco seasoning with a cup of water. I cooked it down and let it sit about half an hour. I shredded some Monterey Jack cheese and some sharp cheddar about 4 ounces each .  I put about 1/4 cup salsa verde in bottom of a baking dish.

Six 10 inch flour tortillas and divide the chicken among each and a sprinkle of cheddar cheese in each. Roll burrito style and place in dish. Cover with salsa verde bake about 15 minutes until hot and bubbly add cheese  put back in oven for a few minutes to melt cheese.

Serve with diced tomatoes, pico de gallo quacame sour cream and any other condiments you like. If you have a bigger family you can serve with rice and retried beans to make it a meal .

for the chicken salad I simply added diced celery, onion and a small amount of Mayo.  It was simple and yummy.

A walk in the park

 

Every day Dad and I try to take a morning walk. Sunday it was rainy but in the afternoon it cleared up.

The Mark Twain riverboat. It runs  hour long cruises and some 2 hour dinner cruises.

We usually take a different route around town or by the river each day. There Is so much to see. We can walk up town,to the river or climb steps ot the lighthouse. to day we went to the river and the park.

When we got back we looked at his flowers he planted in the back.

He decided we needed to trim the rose bush out of his new plant and tied it up. Since he can’t bend or chance anything getting in his eye I got the honors of working with the testy rose bush. I finally managed getting it  tied up to dad’s liking. I  got  squishy mud between my toes, so when we went in I had to wash the bottoms of our shoes.

I did however grab me a few of the daisies he has growing and found a pretty blue soup bowl, using the technique I saw on TV today

I will miss this when I get home since I won’t have this luxury.

Finally I got a chance to go over my sister-in-law so she could teach me how to use my silhouette crafting machine that I got for my birthday…Back in January.  The wait was worth it. I learned some nifty tricks that it took her a while to master and had a nice afternoon with her. We laughed and  had a good time. I also learned it can be a bit time consuming and frustrating. But isn’t everything new?  She showed me how to get designs on my computer and  the ins and outs of running the machine. We figured out what I was doing wrong and I think I can do it on my own now.

Saturday night we are going to the baseball game. It will be my first.
