#foodiefriday~~Feeling Chip-per

I was talking to a friend about healthier snack alternatives to potato chips—one of my biggest downfalls. We came up with several options.

Option one—eat the chips. Yes, you read that right. I don’t mean eat a full family sized bag but get the smaller prepackaged individual ones and eat one bag on occasion( not every day).  You can get a large bag which is sometimes cheaper and bag up the portions into sandwich bags.

Option two—try homemade potato chips and bake them. I like sweet potato chips.. here is the link to the recipe I used. ( My furbaby Molly likes them too)) Carrots make good chips as well.

I do have a mandolin, but a good sharp knife works too.  This works for a regular potato as well. I used the white bakers.

Option three– homemade tortilla chips. I LOVE these. I take a four or corn tortilla spray with olive or buttery cooking spray salt lightly and bake till crispy. I use these for nachos,  or guacamole or just plain ole munching!

Now here is where we go crazy. Fruit and Veggie chips. I have a dehydrator and often try to make apple and banana chips. Sometimes it works sometimes it doesn’t.  It takes practice getting it right so I usually snatch a bag at the grocery store on grocery day. A few of these in the afternoon helps me with sweet cravings. Careful though because these can be higher in calories than you think so be sure to look up serving amounts and don’t exceed. That’s the secret…portion control.

And HERE is a real surprise…Kale chips. I was very shocked with this one. I have a big tub made up now. It’s not expensive, and it’s easy. I bought a bunch of kale, but you can probably get it in a bag as well. The bunch was pretty cheap here. I gave 79 cents for mine. I cut off the stems at bottom wash them pat dry. I line a sheet with foil and spray with olive or buttery cooking spray. I always line my pans for easy cleanup.  Cut the little leaves off and lay on the sheet, the bigger one I cut into bite sized pieces ( remove the thick stem or it gets chewy—YUCK!) You can simply season with salt and pepper, or garlic salt but I like taco seasoning. I tried ranch seasoning it wasn’t for me.  Bake in a preheated oven about 350  for 10 minutes or until crispy. They do get sort of a dark color. The do have a bit of a green aftertaste and are crumbly and messy, but I really liked them.

I think I will try this next time and see if mine is even better.
