What’s for Brinner? #breakfastfordinner #easymeals #frugal


I am sure you have heard of Brunch. Though we may not do the fancy breakfast at lunchtime with the cocktails and all, I am sure on the weekends we have all indulged in brunch in some form or other.

But have you tried Brinner? Breakfast for dinner is a favorite at my house. Our most popular is Sausage, gravy, biscuits and eggs. You can use the gravy powder in a bag and it is pretty good with enough pepper and add some sausage grease or cook as directed and it tastes a lot like the fast-food kind. Or you can make good old fashioned milk gravy.

Growing up we have biscuits and gravy a lot. Sometimes just biscuits and gravy, sometimes eggs and sometimes bacon or sausage, mostly sausage sine it gives the gravy the most flavor and my grandpa had hogs he gave us some of the meat from. My sister and I thought this a big treat at night when we got this meal or pancakes, just eggs or even bologna and oatmeal. I was shocked to find out when I was grown that was an end of the paycheck meal when mom was stretching to make ends meet and feed us. funny how the simplest things can be the best.

I had to do the same and serve biscuits and gravy to my kids for dinner as well and let me tell you if they had a choice they would eat it all the time. My son on his night to choose that was his choice. To this day on his birthday, this is his birthday meal but he does request homemade gravy, not the powder.

Biscuits are not as hard to make as you think. Just flour shortening or butter, water or milk, or simpler yet buttermilk and flour only. This is great with chicken tenders, fried chicken or country fried steak (all for another post. LOL)

Some nights we do waffles or pancakes. I serve simply with fruit, cool whip and syrup ( I prefer the fruit myself). I have a waffle machine so I can make my own waffles but sometimes if I am making for a crowd, not just my husband and myself I use my long griddle on my stove and do the pancakes.https://cafedelites.com/best-fluffy-pancakes/ You can do a lot to jazz this up by adding blueberries, chocolate chips, peanut butter, banana, some cinnamon, and sugar. ( again another post LOL). You can make smaller batches for one or two but why when you can make them all freeze the leftovers and have breakfast, brunch or another dinner. Serve with sausage, bacon or ham steaks or even chicken tenders ( see the southern girl in me)

Another favorite at my house is both my Daughter and Hubby. Hashbrowns. I do use the bagged shredded ones for this but you could shred your own potatoes and squeeze the liquid out and use them if you wish. I have tried that method and find the bagged is easier and even cheaper with the price of potatoes these days. You can use hamburger, sausage or diced ham. Diced ham is my daughters favorite ground beef my husband. so I’ll start with his. One pound of ground beef ( or sausage) seasoned well with salt and pepper. Brown well, with diced onion. remove meat. Add about a quarter cup of oil ( use bacon grease if I have it or even chicken grease) add meat and potatoes stirred well. this is important. once you put potatoes in don’t stir anymore until bottoms are brown, flip over ( you may have to do in sections and brown the top. Once it is all browned and crispy break one egg per person on top of the potatoes and pierce breaking the yolk ( or you can leave the yolk whole and place this in the oven to cook the eggs. We just flip it over, cook for a minute flip back ( my daughter likes cheddar melted on top so add some shredded cheddar or Colby Jack) This sounds tedious but takes about 20 minutes. If using ham omit the browning of the meat.

  1. ‘Brinner? That’s one I haven’t heard. Left to his own devices, 38-year-old son #2 will sometimes eat a HUGE bowl of cereal for dinner. Anything more than this is, I gather, too much work.
